This is probably the easiest chicken recipe that I make on a consistent basis.
Ready?
Mix (in a 3:1 ratio) mayonnaise and mustard, and add in maybe a teaspoon of tumeric.* Spread it over the chicken (whatever you have - chicken cutlets, skin on chicken, bone-in, whatever). Sprinkle almond flour (or crushed plantain chips, potato chips, corn flakes, just plain flour, you get the idea) on top. Sprinkle some salt and garlic powder on top and bake at 375, uncovered, for however long it takes to cook your chicken - it really depends on what kind you use and how big the pieces are.
My kids inhale this stuff, Josh scrapes the bottom of the pan for the brown bits once it's empty, and guests ask for the recipe, which always makes me feel funny because it's not really a recipe.
But it is good.
