Something I hardly ever ever do: take out the food processor. But if there is one time a year that screams grate vegetables, Chanukah is it. And since doing it by hand it out of my repertoire, the food processor it was.
I don't love frying things to begin with, but combine that with having to stand over the stove and watch the latkes fry and I am really not happy. But I do it every year and the kids were expecting it and Josh loves latkes and if I didn't do it, guilt, guilt and more guilt would have been on the menu Friday night. Not any actual guilt from anyone, just the ever-present mommy guilt that runneth over the top of my super-big-gulp-sized-cup.
So latkes it was. And then I remembered that when time was short, my Bobby Toby, a"h, used to make one huge awesome latke in a frying pan, instead of many little latkes. And so in the spirit of sharing, here is her recipe for one huge latke in a frying pan:
One Big Chanukah Latke:
Are you a Mom?
Of course you are,
your shirt is dirty :)
