This recipe made 20 regular size muffins, they came out of the pan very easily after they cooled off, and they freeze well. Does it get any better than that?
2 cups yellow corn meal
2 cups flour
1 cup sugar
6 teaspoons baking powder
1 teaspoon salt
1 cup oil
1 and 1/3 cup soy milk
3 eggs
Preheat to 425 degrees. Combine all the dry ingredients. In another bowl, mix the wet ingredients. Add the wet to the dry (FYI: that's a general baking rule to live by) and mix until just combined. Fill each greased muffin hole(?) cavity(?) cup(?) 3/4 of the way full and bake for 14 minutes. Seriously, don't bake them longer than that. Even if they seem to be not totally done after 14 minutes, don't worry. Take them out anyway and they will finish baking for a minute or so before they cool off.
